Buyer decision
Select the cup before the coffee
This shortlist addresses a cone-filter pour-over buyer who can choose grind, water and pouring pattern. We required an identifiable current US whole-bean listing, a linked Coffeedant review, a roaster flavor brief, and a defensible pour-over role. A specific published recipe strengthened a pick. Apollo remains useful as a flavor-led alternative even though its checked page does not give an Apollo-specific cone schedule. We excluded pods, ground-only listings, products without a clear current identity, and coffees selected solely because a label says “best.” [1] [2] [3]
The picks represent three different directions: Apollo for citrus and floral notes, Geometry for a fruit-led but rounder blend with an exact cone starting point, and Bella Donovan for a darker chocolate foundation that can take milk. These are editorial fit judgments based on roaster information. Coffeedant did not buy, brew, taste, measure extraction, or rank current bags by a sensory score. Read each full review for the underlying evidence and its limits.
The existing espresso-and-drip guide solves a separate problem: finding one bag for two brewing methods. Here the deciding factors are pour-over flavor direction, the roaster’s filter evidence, and the practical recipe a reader can repeat. A roaster’s tasting notes are targets, not a promise about your water, grinder, roast-date bag or palate.
Buyer decision
Hold the brewer constant
Start with one clean cone dripper, a matching paper filter, freshly ground whole beans, a scale and water you would drink. Rinse the filter and preheat the brewer. Record dose, water mass and temperature, grind, bloom, pour schedule and total drawdown. Change one variable at a time when the result misses your preference. A ratio is a starting point, not a quality measurement. [2] [3] [4]
Onyx currently publishes a 25 g to 400 g Origami/Hario cone start at 205°F for Geometry, about 1:16. Blue Bottle publishes 27 g to 350 g for Bella Donovan, about 1:13, and advises the cooler end of its 195–205°F range for darker roasts. These are different recipes for different coffee and equipment contexts. Copying the numeric difference into a head-to-head taste claim would be unsound; compare at one controlled recipe first, then try each roaster’s intended method. [2] [3]
Counter Culture describes Apollo as a medium-roast citrus-floral blend and gives broader brewing guidance on its site. We do not attribute a precise Apollo-specific pour-over dose, water temperature or finishing time to the roaster. Use your brewer’s normal filter recipe, log the outcome, and adjust the delivered bag. A nominal roast category does not settle extraction on its own. [1]

Fruit with a rounded base
Onyx Coffee Lab Geometry
Why: Onyx explicitly favors Geometry for filter as well as espresso and publishes a cone-filter recipe for its washed Ethiopian and Colombian blend.
Tradeoff: Its component lots and brew-guide versions can change; match the current bag and guide.

Use the evidence
Buy a bag you can finish
A current online listing does not prove the roast date of the bag that arrives. Check the package and choose a size you will use while its flavor still suits you. Stumptown’s general freshness advice emphasizes whole beans, a sealed bag or container away from heat and moisture, and grinding just before brewing. We apply that storage principle without presenting its suggested window as a measured shelf life for Apollo, Geometry or Bella Donovan. [5]
Blend names can stay stable while components change. Onyx names washed Ethiopian and Colombian coffees for Geometry at this check; Counter Culture describes Apollo as a year-round blend; Blue Bottle identifies a natural Ethiopian component in Bella Donovan. Those details guide a first purchase, but the actual pack and current roaster record should settle any lot-specific claim. If traceable fixed-origin identity matters most, choose a documented single-origin listing instead.
No delivered price, shipping total or discount is ranked here. Each US cart can vary by bag size, purchase mode, tax and shipping. A smaller first bag often gives more useful evidence than a bulk order made from flavor words alone. Note the roast date and your recipe before deciding whether a larger bag is truly good value.
Use the evidence
When these three are wrong
If you brew mainly through an automatic drip machine, Bella Donovan has an explicit roaster statement for that use, while the cone recipes here need not transfer to the machine’s spray pattern. If you alternate pour-over and espresso every day, Geometry’s separately documented espresso and filter roles may be more useful, but you still need distinct grinder settings. See the linked full review and the espresso-and-drip guide. [2] [3]
If a dark roast in milk is your priority, Bella Donovan is the relevant one of these three; for a dedicated milk-drink comparison, use our milk-drinks bean guide. If you want a lighter floral cup, avoid choosing by a generic “medium” label alone: Apollo’s current citrus/floral words and Geometry’s berry/stone-fruit brief are meaningfully different. Neither has been tasted by Coffeedant. [1] [2]
If the roaster’s flavor direction, current stock or a dated roast cannot be verified for the exact bag, postpone the purchase or select another documented coffee. A beautifully detailed recipe is not evidence of freshness or availability. Avoid converting an older independent tasting or owner comment into a claim about a new lot.
Evidence and limits
How this guide was made
We checked exact current US whole-bean product identities, roaster flavor descriptions, published filter roles and recipes, then reviewed each linked Coffeedant product assessment. The three picks answer different pour-over flavor preferences. We did not conduct a tasting, blind comparison, extraction measurement or availability guarantee.
Roaster descriptions and recipes are attributed. The published ratios apply to the stated product and method, not to every dripper or delivered lot. Recheck stock, size, roast date, shipping and tax in the live US cart before purchasing.
Quick answers
Pour-over bean FAQ
Which pick is best for a floral pour-over?
Counter Culture describes Apollo as citrus, floral and silky. It is a research-led flavor-direction pick, not a Coffeedant tasting result.
Which coffee has a published cone recipe?
Onyx lists a 25 g to 400 g Origami/Hario start for Geometry; Blue Bottle gives 27 g to 350 g for Bella Donovan. Match the exact current guide and your dripper.
Is dark roast suitable for pour-over?
Yes. Blue Bottle publishes a Bella Donovan pour-over method and suggests cooler water within its 195–205°F range for darker roasts. The cup will differ from a light-roast target.
Can I compare the three using their roasters’ different recipes?
That tests coffee and recipe at once. Hold one brewer, water, ratio and procedure constant first, then try each roaster’s suggested method.
Are the tasting notes Coffeedant’s?
No. All flavor words here are attributed to the roasters. Coffeedant has not brewed or tasted these current bags.
Does a product photo verify the roast date?
No. Inspect the delivered bag and confirm the exact whole-bean size and order terms before purchase.
Can I use Geometry for espresso too?
Onyx publishes separate filter and espresso guidance. Save a different grind and recipe for each method; the cone ratio is not a portafilter target.
